Holiday recipe extravaganza #1



I have been reading this blog for a while now and have LOVED
her craft ideas and especially her recipes! When I saw this I wanted to
join in. I am a little behind but better late than never!

This is Alisa's recipe she brought it over when I had Kalab.
It will be great for all you left over turkey!

Chicken pot pie

6 Tablespoons butter or margarine
salt to taste
1/8 teaspoon Thyme
6 Tablespoons flour
1/4 teaspoon pepper
1 1/2 cup chicken broth
1 1/2 cup half & half ( I have used regular milk-and that works fine)
2 cups cooked, then cubed or torn chicken or turkey
1 large carrot, diced and cooked until done
1/2 cup peas, cooked (I have used 1 cup frozen peas, cooked then drained, instead of fresh peas)
4-6 new potatoes, cooked and cubed
1 double crust pastry shell (pillsbury pie crust-red box- or generic -refrigerated section)

Cook first 5 ingredients on low heat until bubbly. Remove from heat and add chicken broth and cream (or milk). Heat to boiling, stirring constantly till thick. Fold together sauce with chicken and vegetables. Pour into uncooked pastry shell. (can mound high in shell) Put pastry shell on top and finish like you would an apple pie - vents. Bake in preheated oven @425 for 30 minutes.
Serve with tossed salad and rolls.

I wish that I still had leftover turkey because I love this recipe! Alisa brought it over when I had Lauren, I think I'll make it my 'you just had a baby' meal too!
